I do hope that all of you had a wonderful Christmas! We had a lovely day at home with family and friends, good wholesome food all mixed in with rain. Considering the kids received a paddle pool and a slip ‘n’ slide, rain was not what we wanted, but it did make for a pleasantly cool day after all the hot weather of the days leading up to Christmas.
As I mentioned in my last blog post, I didn’t get to make all of those yummy recipes, but there were some big hits on the day that I will definitely be repeating for next Christmas (or even before!) They are however, but not surprisingly, all in the desert category!
And here they are…
My Gluten Free, Vegan Christmas Cake (click here for my version) before and after shots. I decorated it before baking it, but I would recommend doing it afterwards and the goji berries burnt and the weight of the almonds etc in the center contributed to it sinking in the middle after cooling, *sigh*. Not the best turned out cake but it was moist and had a lovely flavour. I have to credit the recipe to Sally Wise , (please check out her blog to see the original recipe, not vegan).
Another fav on the day was my Chewy Chocolate Bars which I rolled into balls and then either into dried desiccated coconut or cacao powder to make them that little bit more special.
And then, finally these little beauties: Raw Fruit Mince Pies I got around to making 4 days after Christmas were gobbled up quick smart!
The days since have been spent doing this, well that’s what the kids have been doing anyway 🙂
