Here in Australia, April means Autumn and I love this time of year. Beautiful mild days and cooler nights that are just calling for some really delicious, warm meals that fill little and big tummies alike with yummy goodness, both raw and cooked. So, here are my favourites at the moment, from my kitchen to you xx
Soups are such an autumn dish and this one would have to be my favourite raw soup. It is rich and creamy and full of flavour and is the right colour for Autumn too! Carrot and Ginger Soup 😀
Now if you’re after a raw soup that is a little more traditional, then give this Warm Pumpkin Soup a go.
My Mini Tofu Patties are very cute and are a yummy change from tofu in stir-fry or on kebabs (no that there is anything wrong with serving it that way of course!) They make a gorgeous little burger for small hands and are really lovely served with loads of fresh salad, turning them into an almost raw meal.
Now this meal is a hands down family favourite! We eat it anytime of year, but I think it makes a gorgeous autumn dish with all its rich colours and flavours: the warm comfort of the Veggie Chili, combined with fresh salad and zesty guacamole. It’s a dish that straddles summer and winter beautifully.
And finally, here is my one of debut posts from April 2013 (that I cut and pasted from my blog page and popped into my recipes). ANZAC Biscuits. This is not a raw recipe at all, but rather a tribute recipe to our service men and women that I adapted to vegan.The 25th April is the day us Aussies remember our soldiers both past and present and show our gratitude for their service.
