Sweet Cashew Cream

This recipe is as easy as it gets! Honestly all you have to do is pop all of the ingredients into either you food processor or high-speed blender (the only difference will be in texture).

  • 1 cup raw cashews (soaked for at least 2 hours and drained)
  • 1 cup of tinned pears, drain and retain juice (I am yet to try it out with fresh ripe pears, but I am sure they would work just as well. Will let you know!)
  • 1 tsp vanilla
  • 2-3 Tsp of retained pear juice.

Throw everything into your machine of choice and blitz until smooth and creamy. Add pear juice as needed to get the consistency that you want and voilah!

It’s awesome on pancakes, fruit salad or fruit pies. It really makes a lovely cream replacement. Enjoy 🙂
