Yay, I am so excited to have finally discovered a raw hummus recipe! The added bonus is, it uses up some of that almond pulp I have clogging up my freezer! When one makes raw almond milk a couple of times a week the left over pulp piles up rather fast. I don’t have a dehyrator (yet) so when I find almond pulp recipes that don’t need dehydrating? “Happy Dance” pretty much sums it up 😉
My inspiration came from www.eatingvibrantly.com She has a few other almond pulp recipes that look great too.
Here is what’s in my version:
- 1 cup almond pulp squeezed until it clumps together and is dry to the touch
- 2 medium cloves of garlic
- 1 Tsp tahini
- 1 tsp nutritional/savoury yeast
- 1 lemon juiced
- 1/2 tsp Himalayan salt (or to taste)
- 1/8 tsp cayenne pepper
- 1 Tsp fresh parsley
Place all ingredients into your high speed blender or food processor and blend until smooth and well combined. Scraping down the sides of your machine as needed.
If you are using a Vitamix: I found using the tamper to push everything down on speed 4 worked really well.
Due to the fact I am dehydrator-less, I buy my raw crackers and just recently stumbled across these ones at my local farmers’ market (check out my post on that here) made by a local raw chef!
