These Raw Fruit Mince Pies come from Karen Luvs Life (check out her blog for the original recipe)
Here’s what I did with a few minor changes…
- 1 cup raw cashews
- 1/2 cup desiccated coconut
- 1 Tsp agave or maple syrup
- 1 Tsp coconut oil
Pop everything into your food processor and process until a smooth paste forms. Ideally press into small removable bottom tart shells and place in the freezer to harden. I don’t have tart shells, so I pressed mine out into patty pans in a muffin tray. A little more rustic when turned out, but still yummy. Makes 6.
Raw Fruit Mince Filling
Quantities are approximate
- 2 cups sultanas
- 1/2 cup raisins
- 1/2 cup dried figs – diced
- 1 cup prunes – pitted and chopped
- 1 cup currants
- 1 orange juiced
- 1 tsp ground cinnamon
- 1 tsp nutmeg
- 1/2 tsp all spice
- 2 star-anise
- Zest of the orange – make sure it’s organic
- 2 chia tea bags – made into 1 cup with hot water
Add all ingredients to a large glass bowl that had a lid and stir to combine. Let sit on the bench for at least 24hrs stirring occasionally. The flavours and aroma will develop and it becomes nice and thick.
Mine sat in the fridge for 5 days (!) before I had an opportunity to turn them into pies. They turned out beautiful and the flavour…? Super!
